Midsummer Cinnamon Sweet Cakes

A low carb cupcake recipe to add to your Summer Solstice celebrations!

Cupcake Ingredients

  • 4 tbsp butter (softened)
  • 1/2 cup sweetener (granular)
  • 4 eggs
  • 1 tsp vanilla extract
  • 1 cup plain Greek yogurt
  • 1 cup almond flour
  • 1/4 cup coconut flour
  • 1 tsp baking powder
  • 1/4 tsp salt

Frosting Ingredients

  • 1 cup salted butter (softened)
  • 1 tsp vanilla extract
  • 2 tbsp heavy cream
  • 1 1/2 cup sweetener (confectioners)
  • a sprinkle of cinnamon

Make the Cupcakes

  1. Preheat the oven to 350F.

  2. Combine the sugar and butter in a bowl and mix well.

  3. Combine the almond flour, coconut flour, salt, and baking powder in a separate bowl.

  4. Add the eggs, yogurt, and vanilla to the butter and sugar. Mix. 

  5. Add the flour and dry ingredients to the wet ingredients and mix. Make sure you don't overmix!

  6. Line your cupcake tins. Spoon batter into cupcake tins.

  7. Bake for 25-30 minutes. Make sure they're done by using a toothpick or small knife into the center of a cupcake. If it comes out clean, they're done!

  8. Allow the cupcakes to fully cool before frosting them and before removing them from the liners. They will fall apart if you don't let them cool!

Make the Frosting

  1. Combine the butter, heavy cream, and vanilla. Mix.

  2. Add in half of the confectioners sugar. Mix. Add the other half and mix. 

  3. Ice your cupcakes and sprinkle with cinnamon!
