Midsummer Cinnamon Sweet Cakes

A low carb cupcake recipe to add to your Summer Solstice celebrations!
Course Dessert
Servings 12 cupcakes

Ingredients
  

Cupcake Ingredients

  • 4 tbsp butter softened
  • 1/2 cup sweetener granular
  • 4 eggs
  • 1 tsp vanilla extract
  • 1 cup plain Greek yogurt
  • 1 cup almond flour
  • 1/4 cup coconut flour
  • 1 tsp baking powder
  • 1/4 tsp salt

Frosting Ingredients

  • 1 cup salted butter softened
  • 1 tsp vanilla extract
  • 2 tbsp heavy cream
  • 1 1/2 cup sweetener confectioners
  • a sprinkle of cinnamon

Instructions
 

Make the Cupcakes

  • Preheat the oven to 350F.
  • Combine the sugar and butter in a bowl and mix well.
  • Combine the almond flour, coconut flour, salt, and baking powder in a separate bowl.
  • Add the eggs, yogurt, and vanilla to the butter and sugar. Mix. 
  • Add the flour and dry ingredients to the wet ingredients and mix. Make sure you don't overmix!
  • Line your cupcake tins. Spoon batter into cupcake tins.
  • Bake for 25-30 minutes. Make sure they're done by using a toothpick or small knife into the center of a cupcake. If it comes out clean, they're done!
  • Allow the cupcakes to fully cool before frosting them and before removing them from the liners. They will fall apart if you don't let them cool!

Make the Frosting

  • Combine the butter, heavy cream, and vanilla. Mix.
  • Add in half of the confectioners sugar. Mix. Add the other half and mix. 
  • Ice your cupcakes and sprinkle with cinnamon!
